Happy Challenge

In the wake of the Government shutdown and the sort-of-launched Affordable Care Act, I have noticed that there is very little enjoyable things on the news feeds of any of my social network sites. Even hanging out with my friends eventually leads to the depressing topic of over 800K people out of work. Minus those 400K who are back to work….It still means that the livelihood of many people has been put on hold until some unannounced date.

This Happy Challenge should probably be something we do everyday. Especially now because everyone seems so unhappy with things–regardless of your side. Add something happy to your life each day. Whether it be in conversation or any social network you belong to. If you update your status message a few times a day or share links with friends let one of those shares be happy.
Restrictions on this Happy Challenge? Really not much. It has to be something that makes you happy. It could be pictures of animals too adorable for words such as those found on Cuteoverload.com.

It could be that hilarious video that had you snorting milk through your nose:

Or, perhaps you would like to share a new favorite recipe that is just to die for, like this recipe for Oven Fried Mushrooms I found on Cooking Tip Of the Day.

You can share personal stuff or just about anything. Make sure it is something that makes you happy and isn’t related to all this jacked up stuff that the news media is fully covering for us.

You’ve been challenged. Share something happy.

What made you happy today?
Please share with me, I do need more happy on my blog/facebook/tumblr/twitter/instagram/greader/reddit/inbox.

New Blog Mini Series~Coming Soon!!

Hey all!

image

When I returned from my trip, I asked what types of blogs you have liked in the past or would like to see in the future. So this is what is coming up!

I am currently drafting (weird for me) a blog mini-series in which I categorically break down my adventures in Spain. Brief though it may have been, I tried to soak up the culture and every scrap of food during my stay.

Currently, my mini-series consists of one introductory blog and eight blogs of content.
If, while writing, I find they are too long for the reader of average interest I will break it into better bitesize installments.

Food
People
Places
Hiking
Travel
More about food
Camino

And more….      (probably about food)

Return of the Kat

I’m home!!

Had roughly 7 hours of sleep, food, coffee, water and even planned dinner for tonight.

Can you believe my productivity?
I just generally being lazy. I could do more if I wanted.

In fact today’s plan involved washing up my laundry from the trip, but I got sidetracked when I found baby chicken #9 was laid out in the rain.

Slaughtering an animal for food is one thing, but walking away from a baby animal that is on death’s door is not something I can do.

I brought him in and held him in a dry washcloth for a bit so he could get some of my body heat. This may sound irresponsible but it was the best I could do—I gave the chick some human baby electrolytes (like pedialyte).

Drop by drop he was drinking and currently he is holding on. Nursing baby animals, especially birds is not a strong suit of mine. At least I can say he will be warm, dry and somewhat hydrated if I lose him tonight.

In addition to being the Nightingale to the chicken I am getting supper ready.

Dinner is a little bit random because I don’t want to have to make a full shopping list and spend hours at walmart just after vacation.

Supper is spicy quiche! I will put rotel tomatoes, onions, dry red pepper (+other spices), cheese, milk, and eggs in it.

Dessert is flan! I am using a box mix that we got ages ago at the salvage store. It has set up well in the fridge. Fingers crossed that it tastes as good as it looks.

I’ve missed my readers very much.

How have you all been?

Is there something in particular you would like to read a blog about?

Alive!

Don’t worry everybody I’m not dead! I’m alive and kicking.

I’ve jumped right into the spring schedule with both feet and am preparing to leave for my trip in just 23 days! Ahhhh!

Honestly, I haven’t been taking pictires–which is entirely weird of me. But I promise to jump back on the horse and get things done.

Instead, I will give you two pictures of bacon food that were inspiring. Bacon as a wrapper is quite interesting to me. I wonder if you could wrap sushi rolls in bacon instead of nori.

I love this meal to pieces because it all looks yummy, but the bacon wrapped veggies crack me up. I can see picky eaters thinking veggies are not gross, they just taste like bacon.

Now the bacon taco must have taken a bit of work. Just wow.

Promise to post more regularly and take more pictures. Have a great Saturday. Me? I’ll be 300+ feet underground.
