Spicy Thai Noodles with Chicken {Recipe Revealed!!}

spicythaiprogressMy SiL made this for me when I went to visit her down in Illinoise and I finally got brave enough to try it myself. I will link to my pin of the original recipe and below is my version of the recipe.

Spicy Thai Noodles with Chicken

Ingredients:

2-4 chicken breasts (depending on size)
Salt, garlic powder and curry powder to taste
1/2 box of angel hair or linguine
1/4 cup + 2 Tablespoons of olive oil
1 Tablespoon of dried red pepper flakes
1 Tablespoon of sesame seeds
1 whole sweet onion, diced
1 medium sized green pepper, diced
4 carrots peeled and grated
6 Tablespoons honey
6 Tablespoons soy sauce

Directions:

Grill or cook chicken with desired spices (I sprinkled mine with salt, garlic and curry powder). Allow to cool and chop up the chicken. Add to pot last along with the noodles.
Start boiling pasta, follow box directions for cooking and drain to prevent overcooking.
In a medium sized pot, cook oil, red pepper, sesame seeds. Once you chop up the onion and peppers throw those in as well. Continue to cook on medium heat ntil desired tenderness is reached.
Peel and grate carrots and add to pot once veggies are cooked.
Whisk together honey and soy sauce then add to pot and allow to simmer together for a few minutes.
Add drained pasta & cooked chicken to pot of sauce and veggies. Combine well until all the noodles are covered in sauce. thaispicenoodlesThe best thing you can do is let it sit overnight. You might even consider making a whole box of pasta just so you have the delectable leftovers the next day. spicy thai noodlesThis is the darling recipe card that the original blogger made for her readers. You will notice that I omitted several things. I didn’t feel a need for the toppings so I left them out. I also reduced the amount of oil and added sesame seeds to olive oil because I didn’t have any sesame oil. You might even consider playing with this recipe some more and add even more veggies or add tofu instead of chicken if you fancy that.

I love, love, love this recipe.

Date Movie: Army of Darkness

armyofdarknessKitandKatOkay, maybe this isn’t the best date movie for every couple….Yes, it is.

Big shout out to my siblings, they were gracious enough to foot the bill for a late supper and the movies!! You guys rock!!
Bruce Campbell at his finest in this cult horror-comedy was being shown in the city as a midnight movie!
We both look a little raggedy in this picture because we were really exhausted. We tried and failed to both, nap mid afternoon and then chugg lots of caffeine as the night wore on. Even sleepy, we had a great time! It has been a few years since I have seen Army of Darkness so every line was a roll on the floor laugh again!

Apparently there was no mention of watching horror or any Halloween movies on my Fall Bucket List—SO I FIXED IT. I feel like it was very seasonable and a great excursion. I realize that there are people in the world who have not seen this film. Skip Rocky Horror Picture Show and The Big Lebowski. This is where it is at.

Spiced Pear Bread {Recipe Revealed!!}

pearcakefullA humungous THANKS to Scottyboy & KatyGirl for asking Kaylee from Life Chasers to share her Nutmeg Spiced Pear Cake recipe. This blog was a couple of years old but it was exactly what I needed!!
Recently, I did some reorganization in my cabinets. I pulled all the oldest canned goods out to our wire shelving and put the newer items in the cabinets below. When I pulled out all the older cans I noticed I had six cans of sliced pears in juice. Uh, why? Why did I buy six cans? I like pears, but why do I have quite so many? I refuse to throw out good food and I knew I wanted to make them into a dessert, specifically a sweet bread for Kit and me.
After many, many Google, Pinterest and AllRecipes searches I stumbled on the above linked recipe and added my own tweaks. Below is my version of the recipe and I will make comments below the recipe why I chose to make those changes.
Spiced Pear Bread
Ingredients
3 cups all-purpose flour
3 teaspoons ground nutmeg
2 teaspoons ground cinnamon
1 teaspoon  baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil
3 eggs, beaten
1/2 cup pear juice reserved from drained cans
3 teaspoons vanilla extract
2 cans (30 ounces) pear halves, reserve juice for  and mashed
1 cup chopped almonds
Directions
In a large bowl, combine the first six ingredients.
In another bowl, whisk the sugar, oil, eggs, cider, and vanilla.
Add to the dry ingredients and stir well.
Stir in pears and pecans.
Pour into a greased and floured 10-in fluted bunt pan.
Bake at 350F for 65-70 minutes or until a knife inserted near the center comes out clean.
Cool before removing from pan to a wire rack.20131013_125742My changes from the original linked recipe:
  • Doubled the amount of nutmeg and cinnamon
  • Reduced the amount of salt
  • Used juice from canned pears instead of apple cider
  • Still had some juice wasted–perhaps make the sauce linked in the recipe with the pear juice
  • Increased amount of pears to 30 oz from 29 oz. Simply because I have 15 oz cans instead of the family size cans.
  • I topped my pear bread with nuts instead of mixing them in, but I like the idea of nuts throughout the bread
  • I got to use my new silicone bunt pan…so strange, but it worked!
  • I had a small bunt pan, so I actually made a bunt and a small loaf

This was an awesome recipe
and you can bet your bunts I will be making it again!

19 Netflix Instant Halloween Flicks

My hubbster and I have Netflix Instant and I like to watch a movie from time to time related to the holidays coming up. There are scores of horror movies and they are easy to find if you flip to the Horror/Thriller genre section. These are some movies that maybe are older, funny or flicks I will try to watch despite their scary. I am a scaredy-cat for the most part so I will be watching scary films in mute. I have tried to pick some funny or classic films which are typically a little less scary.
These movies were available for Instant view as of 10-13-2013. They are constantly removing films and adding more. It it by no means an exhaustive list.
Bold text means that I have seen the movie before.

  1. Battle Royale (Japanese Hunger Games but way better, I’m told)
  2. Cabin in the Woods (Joss Whedon’s horror pokes fun at horror film archetypes)
  3. Carrie (Weird girl gets teased until she reaches her breaking point)
  4. Dark Shadows (The old 1960s TV show is nothing like the movie apparently)
  5. Dead Snow (Nazi zombies! Check out my Review!)
  6. Dracula (1931 Lugosi classic, give it a watch–much more tame than modern versions)
  7. Dumplings (A mysterious woman makes youth rejuvenating dumplings with a curious ingredient–not shockingly a foreign horror movie. Check out my Review!)
  8. Elvira, Mistress of the Dark (I am intrigued just because of her costume)
  9. Ghostbusters (A group of goobers go ghost chasing)
  10. House on Haunted Hill (1959 Vincent Price will pay 10K to anyone who can survive a night in the haunted house)
  11. Nightmare Before Christmas (I’m really not sure if this counts–Claymation Halloween King tries to run Christmas for Santa)
  12. The Mummy (1932–Again another not-so-scary classic, it moves really slowly)
  13. Red State (It is Kevin Smith, I have to–Teens get invited to a sex filled night but find out they were lured by a crazed pastor)
  14. Scary Movie (2000 Making fun of other movies)
  15. Scream (1996 A masked killer returns for the daughter of his previous victim)
  16. Session 9 (Asbestos cleaning crew has to clean an abandoned insane asylum)
  17. Tucker & Dale Vs. Evil (Starring Alan Tudyk! Hillbillies are mistaken for serial killers by a group of teens)
  18. Vampires (A faux documentary in Belgium, this sounds interesting)
  19. The Wolf Man (1941–I honestly can’t recall if I’ve seen this or not, this deserves a second watch)

If you watch one movie today you will have 18 movies and 18 more days to watch them in before Halloween. Get to watching!
